I don't know about you, but sometimes after teaching all day the last thing I want to do is cook dinner. I swear Costco has some of my favorite "go-to" items to whip together a quick dinner when I'm being lazy after a long day. I will swing by on my way home and pick up a few staples to create a tasty, yet still healthy meal in 30 minutes or less.Costco has an AMAZING Salmon Milano with Basil Pesto Butter. Seriously it's all pre-ready and you just pop it in the oven! It gives us two dinners, and two meal preps for later on in the week for our lunches!
The Seeds Of Change Rice comes in a pack of 6 at Costco for around $10 (at least in AZ!). I've seen it at Sprouts as well but each individual package is around $3. This Sweet Kale Chopped Salad is seriously to die for as well. My husband is not one for liking any type of sweet salad, especially not one with fruit as a topping, but even he can enjoy this salad. It's so light and refreshing filled with broccoli, Brussels sprouts, cabbage, kale, and chicory. I know right you probably saw Brussels sprouts and thought "this girl is crazy", but even I love it! It definately seems like a summer salad but worked perfectly with the salmon and the flavors meshed so well. This whole meal cost less that $25 and it actually made four meals, so for me that's a win! Anyone else have a favorite quick, healthy, and affordable go to meal? Let us know!
