Let me start off by saying, this is a family recipe that I've tweaked to accommodate mine and hub's taste buds. It originally is my Great Grandmother's recipe, she came over to the states from Sweden, bringing these with her. We get asked to bring this to almost every potluck we attend. Bring it once, and you won't ever be able to show up without it again. It is so simple, and beyond delicious! Ingredients: For the Meatballs 1 lb ground beef 1/4 cup chopped onion (yellow or white) 2 tbsp fresh finely chopped parsely 1 tsp salt 1 egg 2 cups bread crumbs (I prefer to use Panko, they're light, airy and have great texture.) For the Sauce 1/3 cup of your favorite bbq sauce 10 oz (about a half a jar) apricot preserves Sriracha **Note: I made about 1.5 lbs of meatballs because hubby loves these for work lunches. These make amazing leftovers!**
In a separate bowl, combine ground beef, onions, parsley, salt, breadcrumbs and egg. Here is where we get a bit messy. Using your hands, begin mixing your ingredients thoroughly. You do this by hand as to not over mix your meatball, which would make it chewy and tough. Your mixture should not be too wet and thick enough to hold together. Start by preheating a sauce pan over medium low heat. Take your bowl of meatballs over to the oven, next to your saucepan. Browning the meatballs first seals in the flavor, and give it a nice outer exterior since we will be finishing it in the oven, covered in the yummy sauce. Roll out your meatballs one by one, about 2"ish in diameter. Size is really entirely up to you. Do your best to make them the same sizes though, that way they cook evenly. Place them in your hot sauce pan, no oil needed due to the fat content of your meatball. Gently roll them around to get an even browning. Once browned, remove from heat. Line a baking dish with foil, this makes for easier cleanup. Place your meatballs in your lined baking dish and drizzle with that delicious sauce. Bake in 350F oven for 40-45 mins.
Serve over rice, or with any starch. We usually make a veggie or side salads as well. Enjoy!
